- 1 teaspoon baking powder

- 1 teaspoon cinnamon
- ½ cup vegetable oil
- 3 large eggs

- 1 cup crushed pineapple, drained
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan.
- Combine flour, sugar, baking powder, baking soda, salt, and cinnamon in a mixing bowl.
- Whisk together oil, eggs, and vanilla in another bowl. Stir in the crushed pineapple.
- Add the wet ingredients to the dry ingredients. Mix until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 60 minutes or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes before moving to a wire rack.
Notes
Make sure to drain the pineapple well to avoid excess moisture. Adjust spices to your preference.
