Ingredients

  • 1 cup gnocchi

  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken. Season with salt, pepper, and thyme. Cook until browned, about 5-7 minutes.
  3. Add onion and garlic. Sauté for 2-3 minutes until softened.
  4. Pour in chicken broth and bring to a boil.
  5. Stir in gnocchi and mixed vegetables. Reduce heat and simmer for 10 minutes until gnocchi is tender.
  6. Adjust seasoning if needed before serving.
