Description

Nutritious pumpkin pie energy balls that are gluten-free, vegan, and packed with flavor, making them a perfect on-the-go snack.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/2 cup pumpkin puree
  • 1/4 cup honey or maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Optional: chocolate chips or nuts

Instructions

  1. In a mixing bowl, combine oats, almond butter, pumpkin puree, honey or maple syrup, cinnamon, nutmeg, salt, and vanilla extract.
  2. Mix thoroughly until all ingredients are combined.
  3. If desired, fold in chocolate chips or nuts.
  4. Roll the mixture into bite-sized balls.
  5. Place the balls on a baking sheet lined with parchment paper.
  6. Chill in the refrigerator for at least 30 minutes to firm up.

Notes

Store energy balls in an airtight container in the refrigerator for up to one week, or freeze for up to three months. Use a cookie scoop for even-sized balls.
