Ingredients

- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup pure pumpkin puree (not pie filling)
- 1 egg
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 2 tsp pumpkin pie spice
- 1 tsp baking soda
- 1/2 tsp salt
- Optional: chocolate chips or nuts for mixing
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the softened butter with brown and granulated sugars until fluffy.
- Add the pumpkin puree, egg, and vanilla. Mix until combined.
- Whisk together flour, pumpkin pie spice, baking soda, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Scoop dough onto the prepared baking sheet, spacing them apart.
- Bake for 12-15 minutes or until edges are slightly golden.
- Remove from oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Serve warm with coffee or tea. Can add icing for extra sweetness. Store in an airtight container for up to 5 days, or freeze for longer storage.
