- 4 medium sweet potatoes
- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 packet taco seasoning
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- Optional toppings: avocado, cilantro, sour cream
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and poke holes in sweet potatoes. Place on a baking sheet and bake for 40-45 minutes until tender.
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add black beans, corn, taco seasoning, and diced tomatoes to the beef. Stir and cook for 5-7 minutes until heated through.
- Once the sweet potatoes are done, slice them open and fluff the insides with a fork.
- Spoon the beef mixture into the sweet potatoes. Top with cheese.
- Return to the oven for 5 minutes until cheese melts.
Notes
Serve immediately topped with avocado, cilantro, or sour cream. Pairs well with a simple green salad or corn on the side.
