Ingredients

  • 4 medium russet potatoes
  • 1 lb steak (sirloin or ribeye, cut into bites)
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup sour cream
  • 1/4 cup green onions (chopped)
  • Salt and pepper, to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes. Rub with olive oil and season with salt. Bake for 45-60 minutes until fork-tender.
  3. Heat a skillet over medium-high heat while the potatoes bake.
  4. Season steak bites with salt and pepper. Add them to the hot skillet and sear for 3-4 minutes until browned and cooked to your preference.
  5. Remove baked potatoes from the oven. Slice them open and fluff the insides with a fork.
  6. Top each potato with the cooked steak, cheese, sour cream, and green onions.

Notes

These loaded potatoes are delicious on their own but pair well with a crisp salad or grilled vegetables. Store leftovers in an airtight container in the fridge for up to 3 days.
