- 1 lb ground beef
- 1 onion, diced
- 3 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups frozen peas
- 2 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add onion, carrots, and celery. Sauté until soft, about 5 minutes.
- Stir in garlic, cooking for 1 minute more.
- Add broth, peas, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Adjust seasoning as needed.
- Serve hot, garnished with fresh parsley.
Notes
Use low-sodium broth for less salt. Store leftovers in an airtight container in the fridge for up to 3 days. Reheats well on the stovetop or in the microwave.
