Ingredients

  • 2 cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced
  • 1 cup corn, fresh or frozen
  • 1 can black beans, drained and rinsed
  • 1 avocado, diced

  • Lime juice

Instructions

  1. In a large bowl, combine tomatoes, cucumber, bell pepper, corn, and black beans.
  2. Add diced avocado and cilantro to the bowl.
  3. In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
  4. Pour the dressing over the salad mixture. Toss gently to coat.
