- 2 lbs boneless, skinless chicken breasts
- 1 cup queso dip
- 1 cup shredded cheese (cheddar or Mexican blend)
- 8 flour tortillas
- 1 teaspoon taco seasoning
- Optional: chopped cilantro, diced jalapeños, sour cream
Instructions
- Place chicken in the slow cooker. Sprinkle with taco seasoning and pour queso dip on top.
- Cover and cook on low for 6 hours.
- Shred the chicken with two forks directly in the slow cooker. Mix to combine.
- Heat a skillet over medium heat. Spread shredded chicken mixture on half of each tortilla, sprinkle with shredded cheese, then fold.
- Cook each quesadilla for 3-4 minutes on each side until golden and cheese is melted.
- Serve hot with your choice of toppings.
Notes
For added flavor, marinate chicken in taco seasoning and queso dip overnight. Ensure skillet is well-heated for a crispy finish.
