Instructions
- In a bowl, combine the pumpkin puree, chia seeds, almond milk, maple syrup, vanilla extract, and pumpkin pie spice.
- Whisk until smooth and well incorporated.
- Refrigerate for at least 120 minutes, or overnight, to allow the chia seeds to swell and the pudding to thicken.
- Stir well before serving.
