Ingredients

  • 1 can (15 oz) pumpkin puree
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • Optional: chopped nuts or chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a bowl, whisk together pumpkin puree, vegetable oil, applesauce, granulated sugar, brown sugar, and eggs until smooth.
  3. In another bowl, combine flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in nuts or chocolate chips if desired.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
