- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground ginger
- ½ cup granulated sugar
- ½ cup brown sugar
- ¾ cup pumpkin puree
- ½ cup vegetable oil
- 2 large eggs
- ½ cup maple syrup
- 1 teaspoon vanilla extract
- Optional: nuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- Whisk together flour, baking soda, salt, cinnamon, nutmeg, and ginger in a bowl.
- Mix granulated sugar, brown sugar, pumpkin puree, oil, eggs, maple syrup, and vanilla until smooth in another bowl.
- Gradually add dry ingredients to the wet mixture, stirring until just combined. Fold in nuts or chocolate chips if using.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Use fresh pumpkin puree for best flavor and adjust spices to taste. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
