Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1 cup rolled oats
  • 1 cup whole grain flour
  • 1/2 cup honey or maple syrup
  • 1/2 cup milk (or non-dairy alternative)
  • 1/4 cup vegetable oil
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • Optional: nuts, chocolate chips, or dried fruit

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, mix oats, flour, baking powder, baking soda, and salt.
  3. Combine mashed bananas, honey (or syrup), milk, and oil in another bowl.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Fold in nuts or chocolate if using.
  6. Fill muffin cups about 2/3 full and bake for 18-20 minutes.
  7. Check for doneness by inserting a toothpick; it should come out clean.

Notes

Use very ripe bananas for maximum sweetness. Allow muffins to cool before storing in an airtight container.
