- 8 oz pasta (spaghetti or linguine)
- 1 lb shrimp, peeled and deveined
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1/2 tsp red pepper flakes (optional)
- 1/2 cup cherry tomatoes, halved
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
- Add shrimp and red pepper flakes. Cook until shrimp is pink and opaque, about 3-4 minutes.
- Stir in cherry tomatoes and cook for an additional 2 minutes.
- Combine shrimp mixture with the cooked pasta. Add reserved pasta water as needed to create a light sauce.
- Season with salt and pepper. Toss well to combine.
- Serve hot, garnished with parsley and lemon wedges.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet over medium-low heat.
