Ingredients

- 3–4 lbs beef roast (chuck or brisket)
- 2 large onions, sliced
- 3 garlic cloves, minced
- 2 cups beef broth
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- Olive oil
Instructions
- Heat oil in a large skillet over medium-high heat. Sear the beef on all sides until browned.
- Transfer the beef to a slow cooker.
- Add onions to the same skillet and cook until softened. Add garlic and cook for 30 seconds.
- Pour the onion mixture over the beef. Add the beef broth, thyme, rosemary, salt, and pepper.
- Cover and cook on low for 180-240 minutes, or until the beef is tender.
- Slice and serve with the onion gravy.
Notes
For added richness, consider using beef broth instead of water. Use a thermometer to check beef doneness; aim for 190°F for tenderness.
