- 1 ½ cups all-purpose flour
- 1 cup sugar
- ½ teaspoon salt
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 cup canned pumpkin
- ⅓ cup vegetable oil
- 2 large eggs
- ½ cup chopped nuts (optional)
- Streusel topping: ½ cup flour
- ⅓ cup brown sugar
- ¼ cup butter
- ½ teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the flour, sugar, salt, baking powder, baking soda, cinnamon, and nutmeg.
- In another bowl, combine pumpkin, oil, and eggs until smooth.
- Add wet ingredients to dry ingredients. Mix just until combined. Fold in nuts if using.
- Prepare the streusel by mixing flour, brown sugar, butter, and cinnamon until crumbly.
- Pour batter into a greased loaf pan. Sprinkle streusel on top.
- Bake for 50-55 minutes or until a toothpick comes out clean.
- Allow to cool before slicing.
Notes
Use room temperature ingredients for better mixing and don’t overmix the batter.
