Instructions
- Preheat the oven to 350°F (175°C).
- Mix peanut butter, sugar, egg, vanilla, and baking soda until smooth.
- Scoop tablespoon-sized amounts of dough and roll into balls.
- Place on a baking sheet lined with parchment paper, spacing them 2 inches apart.
- Press each ball down lightly with a fork, creating a crosshatch pattern.
- Bake for 10-12 minutes or until they begin to brown.
- Immediately place a chocolate candy in the center of each cookie and let cool.
Notes
Store cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze them in a sealed bag for up to 3 months. Reheat in the microwave for a few seconds to soften.
