Description

Ingredients

  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Optional: lemon juice or zest for garnish

Instructions

  1. Bring a pot of salted water to a boil.
  2. Add the green beans and blanch for 3 minutes.
  3. Immediately transfer beans to an ice bath to stop cooking.
  4. In a pan, heat olive oil over medium heat.
  5. Add minced garlic; sauté for 1 minute until fragrant.
  6. Drain green beans and add to the pan. Cook for 3-5 minutes, tossing frequently.
  7. Season with salt and pepper.
  8. Toss in lemon juice or zest, if desired. Serve warm.

Notes

For extra flavor, add crushed red pepper or switch garlic for shallots. Store leftovers in the refrigerator for up to 3 days.
