Description

A creamy, spiced sauce melds beautifully with tender chicken, easily prepared in a slow cooker.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken thighs
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Sauté onion in a pan until golden.
  2. Add garlic and ginger; cook for 1 minute.
  3. Transfer sautéed mix to the slow cooker.
  4. Season chicken with salt, pepper, and spices; add to the cooker.
  5. Pour in tomatoes and coconut milk.
  6. Mix to combine.
  7. Cook on low for 360 minutes or until chicken is tender.
  8. Shred chicken gently before serving; stir in cilantro.

Notes

Serve over basmati rice or with naan bread. A sprinkle of lime adds a fresh twist. For best results, consider marinating the chicken for a few hours.
