- 1 lb ground beef
- 1 cup shredded cheddar cheese
- 1 cup breadcrumbs
- 1 egg
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 cup ketchup
- 2 lbs potatoes, peeled and cubed
- 1/2 cup milk
- 4 tbsp butter
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine ground beef, cheese, breadcrumbs, egg, onion, garlic, salt, and pepper. Mix until well combined.
- Shape the mixture into a loaf and place it in a baking dish. Brush ketchup on top.
- Bake for 50-60 minutes, or until the meatloaf reaches 160°F (70°C).
- While the meatloaf bakes, boil potatoes in salted water until tender, about 15-20 minutes.
- Drain potatoes, then mash with milk and butter. Season with salt and pepper to taste.
- Serve slices of meatloaf over mashed potatoes. Garnish with parsley if desired.
Notes
Use lean ground beef for a healthier option. Pair with steamed vegetables for a complete meal.
