Healthy and satisfying stuffed peppers filled with spicy Buffalo chicken and fresh vegetables, perfect for meal prep.
Ingredients

- 4 large bell peppers
- 2 cups cooked, shredded chicken
- 1/4 cup Buffalo sauce
- 1/2 cup diced celery
- 1/2 cup diced onion
- 1/2 cup diced carrots
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a pan, heat olive oil over medium heat. Sauté celery, onion, and carrots until soft.
- In a bowl, combine the chicken, sautéed vegetables, Buffalo sauce, salt, and pepper.
- Stuff each pepper with the chicken mixture.
- Place the stuffed peppers upright in a baking dish. Add a splash of water to the bottom.
- Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes.
Notes
Serve with a side salad or over cauliflower rice. Drizzle additional Buffalo sauce on top for extra flavor.
