- 4 ripe peaches, sliced
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup buttermilk
- 1/2 cup bourbon
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- Melt butter and brown sugar in a skillet; pour mixture into the bottom of a greased 9-inch round cake pan.
- Arrange peach slices over the caramel.
- Whisk together flour, baking powder, baking soda, and salt in a bowl.
- In another bowl, beat butter and granulated sugar until creamy.
- Add eggs, buttermilk, bourbon, and vanilla; mix well.
- Combine wet and dry ingredients; stir until just combined.
- Pour batter over the peaches in the cake pan.
- Bake for 35-40 minutes until golden and a toothpick comes out clean.
- Allow to cool slightly, then invert onto a serving plate.
Notes
Serve warm with vanilla ice cream or whipped cream. Store leftovers in an airtight container in the fridge for up to 3 days.
