- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup shredded coconut, toasted
- 1 cup caramel, melted
- 1 cup semisweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the butter and sugar until light and fluffy.
- Add flour and salt, mixing until just combined. Stir in vanilla.
- Press the mixture into the prepared baking sheet evenly. Bake for 15-20 minutes until light golden brown.
- Toast the shredded coconut in a skillet over medium heat until golden while the cookie base bakes.
- Remove the cookie base from the oven; top with melted caramel and then the toasted coconut. Return to the oven for another 5 minutes.
- Melt chocolate chips in a microwave-safe bowl, then drizzle over the top.
- Allow to cool completely before cutting into squares.
Notes
Use unsweetened coconut for a more authentic flavor. Ensure your butter is at room temperature for better creaming.
