- 1 lb ground beef
- 4 medium potatoes, diced
- 1 onion, chopped
- 1 cup BBQ sauce
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: pickles or onion slices for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onions and sauté until translucent, about 3 minutes.
- Stir in ground beef; cook until browned, breaking it apart as it cooks.
- Add diced potatoes; season with salt and pepper. Cook for 10 minutes, stirring occasionally.
- Pour BBQ sauce over the mixture, stirring to combine. Cover and simmer for 15 minutes until potatoes are tender.
- Sprinkle cheese on top and cover to melt, about 3 minutes.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave.
