Delicious banana pancakes that are quick to prepare and perfect for breakfast or a snack.
Ingredients

- 2 ripe bananas
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup milk (or a non-dairy alternative)
- 1 large egg
- 2 tbsp melted butter (or coconut oil)
- Optional: vanilla extract and spices
Instructions
- Mash the bananas in a mixing bowl.
- Add the milk and egg, then whisk until combined.
- Mix flour, baking powder, baking soda, and salt in another bowl.
- Combine wet and dry ingredients, stir until just mixed. Avoid overmixing.
- Heat a non-stick skillet over medium heat and grease lightly if needed.
- Pour 1/4 cup of the batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
- Repeat with remaining batter.
Notes
Serve warm with maple syrup, fresh fruit, or yogurt. Store leftovers in the fridge for up to 3 days.
