- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 3 cups sliced apples (Granny Smith or Honeycrisp)
- 1 tsp cinnamon
- ½ cup salted caramel sauce (plus more for drizzling)
- Pinch of salt
Instructions
- Preheat the oven to 325°F (163°C).
- Mix graham cracker crumbs and melted butter in a bowl. Press into the bottom of a springform pan.
- Beat cream cheese and sugar in a large bowl until smooth. Add eggs, one at a time, and mix in vanilla.
- Pour half the cheesecake filling over the crust.
- Mix sliced apples with cinnamon and salt in another bowl. Layer them over the filling.
- Add remaining cheesecake filling on top of the apples.
- Bake for 60 minutes, or until set but slightly wobbly in the center. Turn off the oven and leave the door ajar for 1 hour.
- Chill in the refrigerator for at least 4 hours before serving.
- Drizzle with salted caramel before slicing.
Notes
Ensure cream cheese is fully softened for a smooth filling. Allow the cheesecake to cool gradually to prevent cracking. Use tart apples for a balance against the sweetness.
