- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup apple cider
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ¼ teaspoon nutmeg
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
- In a separate bowl, beat cream cheese until smooth. Gradually add sugar and apple cider. Mix well.
- Add eggs one at a time, beating well after each addition. Stir in vanilla, cinnamon, and nutmeg.
- Pour filling into the crust and smooth the top.
- Bake for 50-60 minutes or until the center is set.
- Let cool, then refrigerate for at least 4 hours.
Notes
Serve chilled, optionally topped with whipped cream or caramel sauce. Store leftovers in an airtight container in the fridge for up to 5 days. For the best texture, do not freeze.
